How can I provide my course site content to another instructor?

There are two ways to accomplish this:

Via Copy Components

Give the other instructor access to your course site with the Instruct-copy role. This will allow them to copy any course content, Dropbox folders, quizzes, etc. from your course site into their own (provided they have the Instruct-build-grade role in their course.

As long as you grant the instructor access to your site with the Instruct-copy role, they will not be able to modify your course site or see any identifiable student information such as discussion posts or grades. They will only be able to copy the view content and copy it to their own site.

Via Export Components

Use the Import/Export/Copy Components tool to select specific parts of your course site to export as a file (zip package) and then provide that file to the other instructor to import into their course site using the same tool.
